«Rice Pudding»

Recipe«Rice Pudding»



Ingredients:

1 teacup of rice
½ litres of water
2 litres of milk
2 teacups of sugar
3 eggs
Half a lemon peel
1 tablespoon of ground cinnamon

Preparation:


Wash the rice, drain it well and place it in a large saucepan. Add the water and the lemon peel. Cover the pan and allow it to heat until the rice is cooked and almost dry. Remove the lemon peel. Mix the milk and cook over low heat with the pan uncovered, for another 25 minutes or until you obtain a soft cream. Stir occasionally to avoid sticking to the bottom of the pan. Meanwhile, beat the eggs with the sugar for 5 minutes in the mixer and pour over the rice. Mix and cook 5 minutes more, stirring constantly. Remove, place in a deep dish and sprinkle with cinnamon powder.
